Morrissey’s of Doonbeg is entering an exciting new chapter. Established c.1900, we are relaunching as a premium seafood and steak destination on the Wild Atlantic Way, combining strong bar culture with high-quality dining.

We are seeking an experienced, driven and commercially aware Bar Manager to lead our bar operations and build a vibrant, profitable and welcoming atmosphere.

Key Responsibilities:

• Full responsibility for daily bar operations
• Driving beverage gross profit and cost control
• Stock management and supplier negotiation
• Staff recruitment, training and rota management
• Maintaining exceptional service standards
• Developing cocktail and drinks menus
• Ensuring Guinness and draught quality control
• Overseeing live music and event evenings
• Creating a strong, positive team culture

The Ideal Candidate:

• Minimum 3 years’ experience in a senior bar role
• Strong leadership and people management skills
• Excellent knowledge of beverage costing and margins
• Passion for customer service and community engagement
• Ability to perform in a high-volume environment
• Experience with EPOS systems and stock controls
