About the Role:
As the Mixologist at The Ashe Hotel, you will be at the forefront of establishing our bar and restaurant as the ultimate destination in Tralee for exceptional beverage experiences. Leveraging your creativity, expertise, and dedication, you will lead the development of signature drinks and menus that set industry standards and delight our guests. You'll work closely with our bar and restaurant teams, ensuring seamless service and fostering a culture of innovation and continuous improvement.
Key Responsibilities:
- Develop and maintain an innovative cocktail menu reflecting current trends and seasonality.
- Ensure a comprehensive knowledge of bar products and menu items.
- Assist with beverage procurement, costing, and inventory management to optimise efficiency and control costs.
- Uphold uncompromising standards of service and presentation, exceeding guest expectations at every opportunity.
- Collaborate with the wider management team to maximise revenue opportunities and enhance the guest experience.
- Foster a positive working environment, providing guidance, training and support to team members on everything mixology related
- Ensure compliance with all relevant regulations and safety standards.
- Contribute to our sustainability initiatives and waste reduction efforts.
Candidate Requirements:
- Relevant Mixology qualification advantageous but not required.
- At least 5 years F&B experience, preferably in a hotel.
- At least 4 years specialised Mixology experience required.
- Extensive knowledge of wines, beers, spirits, cocktails, and mixed drinks.
- Innovative and creative approach to beverage tasks, with a continuous drive to enhance the food & beverage experience of our guests
- Knowledge of purchasing and revenue generating experience in a busy 4/5* hotel including Bar advantageous
- Experience with relevant software such as Microsoft Office Suite, Tablepaths, Hotsoft, Volante, Alkimii, or similar advantageous.
- Thorough understanding of customer experience and excellence standards.
- A positive outlook and a can-do attitude
- Ability to stand for extended period of times, and lift heavy Food & Beverage items (with assistance as per Manual Handling Best Practice)
- Proactive approach to problem-solving and innovation.
